Taste Tested Tuesday: Going Green!

Today is Earth Day, so we’re going green! This colorful and filling salad was recently a hit at our house. Make the salad even more special by topping it with homemade salad dressing. You don’t have to use the recipe as is. Use more or less of the ingredients here. Give the salad your own twist by adding ingredients you enjoy.

Steak Salad
1 pound sirloin steak, cut into bite sized pieces
1 head Romaine lettuce, chopped
½ cup small red onion, thinly sliced
½ cup mushrooms, sliced
1 (8 ounce jar) roasted red peppers, sliced
4 plum tomatoes, diced
1 carrot, shredded
½ cup shredded cheddar cheese

Toss the lettuce, onion, mushrooms, peppers, tomatoes, carrots, steak, and cheese together in a large bowl. Top with salad dressing and enjoy.

Ranch Dressing
½ cup mayonnaise
½ cup sour cream
½ cup buttermilk
½ teaspoon dried chives
½ teaspoon dried parsley
½ teaspoon dried dill weed
½ teaspoon garlic powder
½ teaspoon vegetable oil
¼ teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon ground black pepper

In a large bowl, whisk together the mayonnaise, sour cream, buttermilk, chives, parsley, dill, garlic powder, onion powder, salt and pepper. Cover and refrigerate for 30 minutes before serving.

Honey Mustard Dressing
¼ cup honey
¼ cup Dijon mustard
2 tablespoons mayonnaise
1 teaspoon steak sauce

In a medium bowl, whisk together all ingredients. Refrigerate for 20 minutes before serving.
