Taste Tested Tuesday: Sweet Potato Fries

Posted by Andrea

I’m posting rather late today because this evening I tried a new recipe I discovered over the weekend. I needed to make sure it was taste tested and approved before sharing it with you. On Saturday, I tuned in to Cooking For Real on Food Network.

Though host Sunny Anderson has a pleasant down to earth personality and a “sunny” disposition I really enjoy, I wasn’t ready to sing her praises until I tried and enjoyed a few of her recipes. This weekend Sunny was preparing a casual meal which included sweet potato fries. In my humble opinion, sweet potato fries are absolutely delicious.

Sunny’s recipe did not disappoint me. They were packed with flavor and were so easy to prepare. The recipe calls for Chinese Five Spice Powder and you should NOT omit it. It’s what gives these fries their unique flavor. The fries are also seasoned with Hungarian paprika. I’m not sure how Hungarian paprika differs from the paprika in my pantry, but I used regular paprika and found the fries tasted just fine. I will suggest that you serve the fires immediately. They get mushy after sitting for while.

Sweet Potato Fries
3 large sweet potatoes
1 teaspoon cayenne pepper
1/2 teaspoon paprika
1/2 teaspoon Chinese 5-spice powder
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1 teaspoon salt
3 tablespoons olive oil

Preheat oven to 450 degrees. Cut potatoes into thick matchsticks. Place potatoes in a medium size bowl. Add remaining ingredients and toss to coat evenly. Spread in a single layer on a baking sheet. Bake until golden brown, about 40 minutes. Fries are best if served immediately.
