Since meatballs are easy to make and they’re super tasty, meatballs make an awesome weeknight meal. I like to make mine from scratch so I can control the ingredients and vary the flavors. Earlier this year I discovered just how flavorful meatballs can be when part of the meatball mixture includes Italian sausage. Talk about yumminess! I fell in love with those meatballs and set off on a mission to create a sausage laden batch I knew my family would love.
If you have time, you can bake the meatballs in the oven, but I prefer to pop them into the slow cooker along with a jar or two of my favorite pasta sauce. After they cook on low for several hours, they’re ready to be served sandwich style on a long roll or atop plate full of hot spaghetti.
Simple Slow Cooker Meatballs
1 pound lean or extra-lean ground beef
¾ pound Italian sausage, removed from the casing
½ cup breadcrumbs
1 tablespoon minced garlic
1 teaspoon dried basil
1 medium onion, finely chopped
2 large eggs
½ cup grated Parmesan cheese
2 tablespoons water, or as needed
1 (26 oz) jar pasta sauce
Combine all ingredients except the pasta sauce. Use just enough water to moisten the mixture. Scoop meat mixture by the tablespoon and shape into meatballs.
Pour half the jar of pasta sauce into the slow cooker. Add the meatballs and then pour the remaining sauce over the meatballs. Cook on Low for 5 to 6 hours.
