A mom’s life is a busy one. There’s always something for us to do. Because I’m trying to juggle so many things, it’s easy for me to let the dinner ball drop. To prevent that from happening regularly, I love to use my slow cooker. I can load it up with ingredients in the morning and have a great meal ready by the afternoon.
But what happens on the days when times gets away from me and I don’t have time to prepare a slow cooker meal? During times like that, I turn to my digital pressure cooker. It’s an amazing kitchen appliance that helps me get delicious and flavorful meals on the table fast! Inside, the ingredients are cooked under high pressure, foods cook much more quickly and are packed with flavor.
Pressure cookers have been around for ages. In fact, my grandmother used hers to prepare roasts and collard greens all the time. I admit it. Her pressure cooker was scary. It was big. It was loud. It was hot. And as children we were not permitted to go near it. Thankfully, today’s generation of pressure cookers are much more user friendly. They feature easy to read digital displays and come up to pressure quickly and safely.
I own QVC’s 6 quart Cooks Essentials Pressure Cooker. The easy to use push button display, safe and simple pressure valve, and a roomy insert make it very easy to use. All you need to do is add ingredients to the insert, lock the lid, confirm the settings, and allow about 10 minutes for the slow the cooker to come up to pressure.
In the past, I’ve made a very tasty pressure cooker macaroni and cheese my kids enjoy and a tender pot roast. Today, I’m sharing another wonderful pressure cooker recipe, Pork Chops and Potatoes. This recipe took about 40 minutes to prepare. That’s it. Prep time took about 10 minutes. Once the ingredients were locked safely inside the pressure cooker it took about 10 minutes for it to come up to pressure and another 15 minutes to cook.
Pressure Cooked Pork Chops and Potatoes
8 pork chops (I use center cut.)
salt, pepper, garlic powder to taste
2 tablespoons butter
2 tablespoons olive oil
1 large onion, sliced
1 tablespoon minced garlic
1 cup chicken broth
¼ cup steak sauce
5-8 red potatoes, sliced in half
Season the pork chops with salt, pepper, and garlic powder. Add the butter and olive oil to the pressure cooker and use the browning function to melt the butter. Brown the pork chops on both sides and then remove them from the pressure cooker.
Add the onion and minced garlic and sauté until the onion turns translucent, about 8 minutes. Add the chicken broth, steak sauce, and any additional salt and pepper. Stir to combine.
Place the potatoes into the pressure cooker and put the pork chops back into the pressure cooker. Close and lock the lid. Set the timer for 15 minutes to allow the pork and potatoes to cook. When 15 minutes is up, allow the pressure to release slowly or use the quick regular release method.
Serve with a green vegetable and be sure to spoon the flavorful juice over the pork chops and potatoes.
