By the time Friday night rolls around, I’m all cooked out. The last thing I want to do is stand over the stove or hover near the oven. That means I need a simple but great tasting meal to serve my family. Loaded Nachos fit the bill and have become a family favorite.
Loaded Nachos are the perfect Friday Night Special. They taste delicious and are easy enough for my nine year old to prepare. The recipe I’m sharing is a basic one you can use as a starting point. Make these nachos your own by loading them with whatever toppings suit your taste buds.
Easy Loaded Nachos
1 pound ground turkey
1 (16 oz) bag of restaurant style tortilla chips (We prefer Utz.)
1-2 packets of taco seasoning (or use this homemade taco seasoning recipe)
1 medium red bell pepper, chopped
1 small red onion, chopped
2 scallions, chopped
2 cups Mexican cheese blend (We ALWAYS use more!)
Preheat the oven to 350 degrees. In a large skillet cook the ground turkey until it is thoroughly brown. Stir in the taco seasoning.
Spread the tortillas evenly over a 9×13 baking dish. Try to place the tortillas curled up so the toppings will nestle into the chips more easily. Top the tortilla chips with an even layer of ground turkey. Then add layers of red bell pepper, red onion, scallions, and Mexican cheese.
Bake in the oven for 20 minutes or until the cheese is melted. Serve immediately.
