My husband and the kids love tacos. I love a one pot wonder. This pressure cooker taco soup is a win for everyone because it has the taco ingredients we all enjoy and it’s quickly and easily prepared inside our 6 quart pressure cooker.
This soup is great for chilly fall evenings and for those nights when I don’t feel like putting a lot of effort into a meal. I serve it with garnishes of cheese and crumbled tortilla chips and a side of cornbread. Most of the soup disappears in one sitting! Yes, it’s that good.
Pressure Cooker Taco Soup
2 pounds ground turkey
1 onion, chopped
2 (1.25 ounce) packages low sodium taco seasoning mix
1 (15 ounce) jar salsa
4 cups chicken broth
1 can chopped tomatoes with green chiles (like Rotel)
1 (15 ounce) can black beans beans, drained and rinsed
1 (15 ounce) can whole kernel corn, drained
1 envelope ranch dressing mix
Place the ground turkey, onions, and 1 packet of taco seasoning into the pressure cooker. Use the browning function to brown the meat.
Add the remaining ingredients (including the other packet of taco seasoning) and stir. Close and lock the pressure cooker. Set the timer for 10 minutes and allow the soup to cook. When the 10 minutes is up, allow the pressure to release slowly or use the quick regular release method.
